Recipe:
- firstly, in a large Kadai, take 4 tbsp of oil.
- add the tempering ingredients like mustard seeds, urad dal, chana dal, red chili, and curry leaves.
- allow them to splutter. and then add green chilli.
- after that, add chopped brinjal. to avoid de-colouration and to remove the bitterness, soak brinjals in water.
- also add groundnuts.
- saute and fry them till they shrink in size.
- furthermore, add tamarind juice.
- also add 2 tsp of Holla Spices Vangibath Powder, jaggery, salt and turmeric powder.
- give a good mix and cook till the tamarind water is evapoartaed.
- furthermore, add cooked rice and gently mix the rice with the masala.
- also add few coriander leaves.
- finally, serve vangi bhath with raita.
